{the weekly cookie} banana bread

I woke up today with no calling for baking. The weather is rainy and gloomy and I just wanted to sit in bed with a book and a cup of tea. But then, browsing, I found a banana cookie recipe and I just imaged how the kitchen will smell and how good these would be with the above mentioned cup of tea. So here it is, a banana cookie recipe from Emily’s Cupcakes. Oh, and this is the I-am-half-way-there cookie.



  • 250g sugar
  • 150g brown sugar
  • 250g butter
  • 600g flour
  • 1 tsp baking powder
  • 3 medium ripe bananas (approx. 300g)
  • 300g sour cream
  • 2 eggs
  • 2 tsp vanilla extract

Cookie making:

  • Pre-heat the oven to low to medium heat
  • Combine flour and baking powder and set aside
  • Puree the banana, combine with sour cream, the eggs and vanilla extract
  • Cream together the sugar and butter
  • Incorporate the banana smoothie in the buttery sugar. Mix well to combine
  • Incorporate the flour using a spatula. This will become a spoonable batter
  • Spoon the batter onto the pre-greased/lined tray and bake for 12-13 minutes, until golden brown on the outside. Just like banana bread, these will remain rather moist inside
  • Enjoy with a book and a cup of tea
