In Cupcakes and muffins, this recipe is called the hummingbird. Actually, they should be cupcakes, but I have a slight issue with frostings, so I turned them into muffins. Yummy and very flavored.
You know the drill: 125g flour, 1 tsp baking powder, 1/4 tsp baking soda, 1 tsp cinnamon, 75g coconut flakes, 70g ground walnuts, 150g brown sugar in the dry ingredients bowl. Two bananas (approx. 170g) mashed, 125 ml vegetable oil, 2 eggs in the wet bowl. Fold in the wet ingredients over the dry ones. Fold in 180g diced, canned pineapple.
Bake over low to medium heat, in pre-greased muffin cups.
