{the weekly muffin} ginger bread muffins

Christmas is right around the corner, so for today, muffin 51, is a Christmas inspired recipe fromĀ Hamlyn All Color 200 Cupcakes, ginger bread muffins. Just yummy.

Here is how the ginger bread story unfolds.

One large bowl will hold 250g flour, 2 tsp ground ginger, 1 tsp baking powder and 1 tsp baking soda, 150g dried fruits and almonds (finely chopped). In a coffee pot or sauce pan, melt 85g butter, add 130g brown sugar and 200g maple syrup. Stir to combine. Add 200ml milk over the sugar syrup, then beat in 1 egg.

Fold the wet ingredients over the dry ones, then bake over low to medium heat for 10 minutes.

One more recipe left. And already thinking what other baking project to take on next year. I’m thinking quiches and tartes. Or maybe pancakes. Or biscuits and cookies. What do you think?
