{the weekly muffin} lemon and coconut

Another muffin recipe from Cupcakes and muffins that should have been a cupcake recipe, but well, I am need of muffin recipes. This turned out extremely fluffy and the lemon gives it a very nice flavor.

In the large bowl, combine 125g flour, 1 tsp baking powder, 45g coconut flakes, 170g caster sugar. Melt 125g butter, add juice and zest from one lemon, 1 tsp vanilla extract and 1 tsp lemon extract. Fold the wet ingredients in the dry ones.

Spoon the batter in the pre-greased muffin cups and bake for 10 mins. Take the muffins out and sprinkle with some more coconut flakes and return in the oven for another 10 min. I came up with this baking method because I forgot to sprinkle the coconut flakes right from the beginning. But it turned out ok, since the coconut flakes didn’t have time to get over-baked.

You can enjoy this tasty, fluffy muffins with hot cocoa or tea.
